Xi'an's cuisine is unique in China — it's the gateway to Northwest flavors. Think lamb, cumin, hand-pulled noodles, and bread that's everywhere. Here's what you MUST eat:
1. Roujiāmò (肉夹馍) — Chinese Hamburger
Slow-braised pork (or beef/lamb) stuffed into a crispy flatbread. The meat falls apart, bread is crispy outside, chewy inside. Xi'an's answer to a burger — but infinitely better!
Where: "Lǎo Sūn jiā" (老孙家) — most famous. Any Muslim Quarter stall.
Price: ¥15 / $2
2. Yangrou Pāomò (羊肉泡馍) — Lamb Soup Bread
Hand-torn bread pieces in rich lamb broth with cilantro. You TEAR the bread yourself (it's a ritual). Pure comfort food on a cold day.
Where: "Lǎo Mǎngjiā" (老马家) in Muslim Quarter.
Price: ¥35 / $5 (large portion)
3. Biángbiáng Miàn (裤带面)
Wide "belt noodles" with chili oil, garlic, and vegetables. The name has the most complex Chinese character (57 strokes!). Hand-pulled, chewy, and spicy.
Where: "Lǎo Wú Jiā" (老吴家) — Muslim Quarter side streets.
Price: ¥18 / $2.50
4. Lamb Kebabs (羊肉串)
Xi'an's kebabs are legendary — lamb marinated in cumin, salt, and chili. Grilled over charcoal until crispy outside, juicy inside. Best at night, washed down with Xi'an beer.
Where: Any night market, but especially Yongning Fang.

5. Cold Noodles (凉皮)
Silky rice noodles with chili oil, vinegar, cucumber, and bean sprouts. Perfect summer dish — cold, refreshing, and slightly spicy.
Where: Street food carts everywhere.

6. Fried Rice with Eggs (蛋炒饭)
Simple but done right in Xi'an — fluffy eggs, green onions, and light soy sauce. The benchmark of a good Chinese restaurant.
Where: Any local restaurant.

7. Spicy Cumin Noodles (香辣牛肉面)
Hand-pulled noodles in spicy beef broth with cumin and chili flakes. Warming, filling, and absolutely delicious.
